Grape variety: Zweigelt (Kurzberg vineyard) After destemming, the whole berries fall, largely intact, into an open vat, then a layer of carbon dioxide is applied, and the container is closed. The berries then macerate undisturbed for 2 3 weeks. During this time, a type of carbonic maceration occurs. Additionally, the skins are extracted without mechanical or thermal influences. This creates a modified
